Ingredients

1 Acorn Squash -
1 Tbsp Olive Oil

½ tsp kosher salt

1 Tbsp Rumi Garam Masala

¼ cup flat leaf parsley, chopped
Directions
Preheat oven to 400F.
Using a sharp, serrated knife, slice squash in half. Scoop out seeds and scrape inside until clean. (Seeds may be saved and used in our Roasted Acorn Squash Seeds Recipe)
Place squash halves cut side up in a shallow foil-lined baking dish or cookie sheet.
Brush with olive oil. Sprinkle with Garam Masala and salt.
Roast approximately 40 minutes or until squash is tender and edges are just starting to turn golden.
Sprinkle with chopped parsley.
