Garam Masala Ground Lamb Lettuce Wraps

Ingredients
- Canola or grapeseed oil
- 1 small yellow onion, diced
- 3 large garlic cloves, minced
- 1 Tbsp minced fresh ginger
- 1 large carrots, grated (about 1 cup grated carrot)
- 1 lb. ground lamb (or ground chicken, beef or turkey, if preferred)
- Kosher salt and freshly ground black pepper
- 2 Tbsp Tamari or soy sauce

1 Tbsp Garam Masala spice blend
- 1 cup fresh cilantro leaves, chopped, plus more for garnish
- 1 head Boston lettuce, separated into individual lettuce cups
- Greek yogurt and/or hot sauce, for serving (optional)
Directions
Heat a large skillet over medium heat and coat with about 1 Tbsp of cooking oil.
- Add in the onion and a pinch of salt and cook until softened, about 5 minutes. Stir in the garlic, ginger, carrots and ½ tsp salt. Continue cooking until softened and fragrant, about 2 minutes more.
Add in the ground lamb, breaking apart with a wooden spoon. Once the meat is about halfway cooked through (about 5 minutes) stir in the soy sauce, Garam Masala, another ½ tsp salt, and the cilantro. Continue cooking, stirring frequently, until the meat is cooked through, about 5-7 minutes more. Season to taste with salt.
- Serve your warm ground lamb mixture over crisp lettuce leaves. Top with a dollop of Greek yogurt, a drizzle of hot sauce (if desired), and more fresh cilantro.
