• 4 large carrots, peeled, cut in half and quartered

• 1 large sweet potato, peeled, cubed

• 1 medium russet potato, peeled, cubed

• 1 medium parsnips, unpeeled, cubed

• 1 medium red onion, thinly sliced lengthwise

• 3 teaspoons Rumi Za'atar spice blend
