Ingredients

Gummy molds or silicone ice cube trays

1 cup saffron simple syrup
- 1/4 cup gelatin (or 4 packets of Knox gelatin)

2/3 cup cold water

Directions
Add the water to a small saucepan and heat over medium heat until very warm, but not boiling. (Or heat your water in the microwave).
Place your molds on a large, rimmed baking sheet. Spray lightly with unflavored cooking spray. (This makes it easier to pop the gummies out of the trays).
In a large mixing bowl, whisk together ¼ cup of the saffron syrup and the gelatin until combined.
Slowly add in the hot water, whisking to combine, until all of the gelatin has been dissolved.
Whisk in the remaining saffron syrup.
Carefully pour the mixture into your prepared molds molds. (A large Pyrex-style measuring cup works well for this).
Place in the refrigerator and chill for about 1 hour, or until firm.
Gently pop your gummies out of the molds.
Store in the refrigerator until ready to enjoy, up to one month.
